We absolutely love making this easy crustless quiche. It is quick, easy, can be prepared ahead and made in a pie dish or muffin pan.
Ingredients:
- 1 tablespoon vegetable oil
- 1 yellow medium onion (chopped)
- 10 ounce frozen package of chopped spinach (thaw and squeeze to drain very well)
- 5 large eggs
- 1/4 teaspoon of salt
- 1/8 teaspoon of black pepper
- 1 block of shredded muenster cheese (we use Boar’s Head)
Directions:
Preheat the oven to 350°. Use a non stick spray to spray a pie dish or muffin pan. Add the vegetable oil to a frying pan on medium heat. Add the chopped onion and cook until translucent. Then add the chopped spinach. Make sure the spinach is completely squeezed dry from water. Cook until all excess moisture has evaporated. Remove from heat. In a large bowl whisk together the eggs, salt and pepper. Add the shredded Muenster cheese and spinach/onion mixture. Mix well. Pour into the pie dish or scoop into muffin pan. Cook for 30 minutes.
