Vegetable Sushi- Avocado and Cucumber Rolls

  •  1 package of nori
  • 2 cups of rice
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 4 avocados
  • 1 large cucumber

Sushi Rice
The first step is to rinse the rice by placing the uncooked rice into a mixing bowl and covering it with cold water. Swirl the rice in the water and pour out water holding the rice back with your hand. Repeat this 2 to 3 times. Next you will cook the rice according to the package. When the rice is ready, combine the rice vinegar, sugar and salt in a small bowl. Give the vinegar mixture a stir and microwave the mixture on high for 30 seconds. Transfer the rice into a mixing bowl and pour the vinegar mixture over the rice, folding it until completely combined. Allow the rice to cool a little before preparing the sushi. While the rice cools, cut the cucumber and avocado into 1/4 inch strips.

Preparing Sushi
Using a sushi mat, lay one piece of nori down. Spread a thin layer of rice all over leaving a small portion towards the top empty (about 1/2 inch). Then add 5 or 6 slices of cucumber or avocado (or a combination of both) on top of the rice across the bottom. Using your sushi mat, roll the sushi tightly towards the top. Cut the roll into 1 inch slices with a sharp knife. Serve with steamed edamame and gluten free soy sauce on the side. Enjoy!
