Bean Dip

Ingredients:

  • 2 cans shoepeg corn
  • 1 can black beans (rinsed)
  • 1 can black eyed peas (rinsed)
  • 2-3 celery stalks (diced)
  • 1 red pepper (diced)
  • 2-3 scallions
  • 1 block Monterey Jack cheese (diced)

Dressing:

  • ¾ cup sugar
  • ¾ cup vegetable oil
  • ¾ cup champagne vinegar

Directions:

Combine everything and marinate overnight.

Enjoy with Tostitos scoops!
