Ingredients:
- 2 cans shoepeg corn
- 1 can black beans (rinsed)
- 1 can black eyed peas (rinsed)
- 2-3 celery stalks (diced)
- 1 red pepper (diced)
- 2-3 scallions
- 1 block Monterey Jack cheese (diced)
Dressing:
- ¾ cup sugar
- ¾ cup vegetable oil
- ¾ cup champagne vinegar
Directions:
Combine everything and marinate overnight.
