Cookies and Cream Icebox Cake


This super easy recipe is a huge hit in my house!

Ingredients:

•1 cup of powdered sugar

•1 quart of heavy cream

•2 boxes of Goodie Girl Chocolate Crème Sandwich Cookies (affiliate link)

Directions:

Mix powered sugar and heavy cream in a stand mixer (whisk attachment) on medium speed until it thickens. Divide the mixture into thirds. Using a rubber spatula, add one third of the whipped cream mixture to the bottom of a springform pan and smooth out evenly with the rubber spatula or an offset spatula. Then layer the Goodie Girl Cookies (affiliate link) evenly on top. Add the second third of the whipped cream mixture to the top and smooth out evenly with the spatula. Place another layer of the Goodie Girl Cookies on top of the second layer of whipped cream mixture. Layer the last third of the whipped cream mixture on top and smooth out evenly. Crumble about five to six cookies and sprinkle on top of the last layer of the whipped cream mixture. Cover with plastic wrap. Put in the refrigerator for 6 hours or even overnight. You want the cookies to soften a little. You can also freeze this cake and my kids have enjoyed it both ways! Gently take a knife or offset spatula around the edge of the cake and then release the wall of springform pan. Now slice, eat and enjoy!
