Sweet Potato Casserole

  • 3 pounds of sweet potatoes or yams
  • 1 or 2 apples (peeled and cut into small pieces or thin slices, can be grated as well)
  • butter
  • milk (or milk alternative)
  • mini marshmallows


Boil the potatoes in a large pot with the skin on. When the fork can go through easily, they are done. Drain the water and let the potatoes cool. Then peel the potatoes. They will peel easily. Whip with butter and milk to a consistency and tasting of your liking.  Creamy but not too creamy. In a buttered large casserole dish put in a layer of the potatoes, a layer of apples and mini marshmallows. Dot with some butter.  Repeat layers. Top with some butter and marshmallows. Put in the oven at 350° until the marshmallows start to brown for at least 30 minutes depending how deep your dish is. Ours is pretty deep so takes awhile to heat through.  So sweet and delicious!
