Quinoa Salad

•1 cup of uncooked quinoa
•1/4 cup of olive oil
•1/4 fresh lemon juice
• 5 scallions (sliced)
•1 English cucumber (chopped)
• 1 cup of cherry tomatoes (halved or quartered)
•1 cup of mint (chopped)
•1 cup of parsley (chopped)
• 8 oz. of feta cheese (crumbled)


In a medium saucepan, bring 2 cups of water to a boil and add the quinoa. Cover and reduce heat. Simmer for 15 minutes or until all of the water is absorbed. Place the cooked quinoa in a large bowl and let cool. Once cooled add the scallions, English cucumber, cherry tomatoes, mint, parsley and feta cheese. In a small bowl whisk together the olive oil and lemon juice. Pour the dressing over the quinoa and mix all together to combine.  This can be served at room temperature or chilled. If serving chilled, cover with plastic wrap and put it into the refrigerator until ready to serve.
